Sheridan House Oatmeal

Our oatmeal has made converts out of those who thought oatmeal just came from little packets. We continually hear, “This is the best oatmeal ever.”  It’s easy but it does take time, and the variations are endless by using different seasonings, fruits and flavors.

 

Prep Time: 5 Minutes
Cook Time: 30 Minutes
Total Time: 35 Minutes
Servings: 4 starter size or 2 bowls

Ingredients:

  • 1 cup rolled oats (can be gluten free) – this is NOT instant oats
  • 2 cups unsweetened coconut milk
  • 1 cup water
  • 1/8 cup chia seeds
  • ¼ cup coconut flakes (not shredded)
  • ½ cup dried fruit (raisins, craisins, pineapple, dates, figs, candied ginger, mango)
  • Pinch of sea salt
  • Fresh fruit for garnish
  • Raw organic agave syrup

Instructions:

  1. Put all ingredients in a non-stick sauce pan and cook on low heat about 30 minutes or until it is of the desired consistency. If it is too thin, turn the heat a little higher, or if it is too thick, add a little more coconut milk.

  2. Spoon into serving dish and garnish with any fresh fruit. Drizzle a little agave syrup on top before serving.

  3. NOTE: We make many variations of this, depending on the season. Be creative and imaginative.
    Fall – Pumpkin: add ½ can pumpkin puree and 2 Tbls pumpkin pie spice
    Holiday – Gingerbread: add ¼ cup molasses, 1 tsp each of ground ginger, all-spice &
    nutmeg
    Cinnamon – add 1 Tbls ground cinnamon and garnish with cinnamon stick
